The present invention relates to an interesterified cocoa liquor comprising randomly interesterified cocoa butter, wherein said interesterified cocoa butter comprises specific fatty acid composition and glycerides weight ratios. Processes for producing the dark, red and dark, brown natural cocoa products are also disclosed. In one embodiment, a process for producing a dark, natural cocoa includes mixing a cocoa product selected from the group consisting of cocoa nibs, cocoa beans, and a combination thereof with water, heating the cocoa product and the water to a temperature of at least 85°C, drying the cocoa product, and grinding the cocoa product, thus producing cocoa liquor. The cocoa product is not alkalized during the process.

In order to produce darker and more reddish colors in cocoa products, such products have to undergo through an alkalization process which is known to alter the flavor, color and the solubility of the cocoa powder in water. The instant invention proposes a novel process for producing a dark brown natural cocoa product comprising producing a mixture by mixing cocoa cake and water; subjecting the mixture to an elevated pressure between 5 psi and 25 psi; and producing a dried cocoa cake by drying the mixture, wherein the dark brown natural cocoa product has the color of alkalized cocoa products, but is not alkalized.
