PLANT-PROTEIN-CONTAINING BEVERAGE AND PRODUCTION METHOD FOR SAME
The present invention provides: a plant-protein-containing beverage in which the characteristic harshness and bean-like taste of the raw material of a plant protein are reduced; and a production method for the same. This problem can be solved by adjusting the sweetness of the plant-protein-containing beverage to 2.7 or greater. Furthermore, by adjusting the sweetness and the sodium concentration of the plant-protein-containing beverage, it is possible to further reduce the characteristic harshness and bean-like taste of the raw material of the plant protein, and to easily produce a plant-protein-containing beverage in which sweetness is controlled and which utilizes the inherent umami and richness of flavor of the ingredients.
Provided are: a plant-based cheese-like food product that contains plant-based protein and has nutritional value as a food product but also has a cheese-like texture; and a production method for the cheese-like food product. The present invention provides a cheese-like food product that includes starch, water, an emulsifier, fat, and plant-based protein. The mass ratio of the total of the starch and the plant-based protein to the water is 0.40–0.80, and the mass ratio of the plant-based protein to the fat is 0.10–0.55. The cheese-like food product includes, as the starch, at least one of a hydroxypropylated starch, a hydroxypropylated phosphoric acid–crosslinked starch, and an acetylated adipic acid–crosslinked starch and, as a result, is closer to the texture of a commercially available processed cheese.
