[Problem] The present invention provides a method for improving the salty taste of food, the food containing salts and further containing grains. [Solution] A method for reinforcing the salty taste of food containing salts, characterized in that rare sugar is included in a raw material of the food containing salts. The method for reinforcing the salty taste is a salt-reducing method for reducing the salt content of food containing salts, or a method for masking the grain odor derived from grain in a raw material of food containing grain to which salts are added as a part thereof. BRANCHED DEXTRIN, PROCESS FOR PRODUCTION THEREOF, AND FOOD OR BEVERAGE
Disclosed is a branched dextrin which is insusceptible to digestion and has a low osmotic pressure. Also disclosed is a process for producing the branched dextrin. The branched dextrin is characterized by having such a structure that glucose or isomaltooligosaccharide is bound to a non-reducing terminal of dextrin via an α-1,6-glucoside bond and having a DE value of 10 to 52. The process is characterized by comprising allowing maltose-producing amylase and transglucosidase to act on an aqueous dextrin solution to produce the branched dextrin, wherein maltose-producing amylase and transglucosidase are allowed to act at an enzymatic unit ratio of 2:1 to 44:1.
The invention provides a sparkling alcoholic beverage produced using, as a part of ingredients thereof, at least one selected from the group consisting of etherified starch, etherified cross-linked starch and enzymatic hydrolysates thereof; and a method for producing the sparkling alcoholic beverage, wherein at least one selected from the group consisting of etherified starch, etherified cross-linked starch and enzymatic hydrolysates thereof is added in any step of the production process.

A preservative solution for low temperature preservation of animal or human organs and animal or plant tissues or cells contains D-allose. For the human kidney, cells derived from animals or humans, or human or animal sperm and/or ovum and/or fermented ovum, the preservation is conducted at from −5 to 20° C. For cells derived from animals or humans, or human or animal sperm and/or ovum and/or fermented ovum, the preservation is conducted at a temperature at which to start freezing to −196° C. A method for the low temperature preservation of an animal or human organ and an animal or plant tissue or cell at a low temperature comprises (a) refluxing or immersing a preservative solution containing D-allose and the organ or the tissue or mixing the cell therewith, and (b) cooling the organ, the tissue or the cell to a low temperature of from −5 to 20° C.

This invention provides a preparation of a powdered plant sterol ester which comprises a plant sterol ester, an octenyl succinate-modified starch and an indigestible dextrin. The preparation can be prepared by a method comprising the steps of emulsifying a plant sterol ester in an aqueous solution containing an octenyl succinate-modified starch and an indigestible dextrin to form an emulsion and then powdering the resulting emulsion. The invention permits the application of plant sterol esters to wide variety of foods and drinks. Disclosed is a film-like soap which contains a soap base or a soap component in a large quantity and has excellent solubility in water, drought resistance and anti-blocking property. A sheet- or film-like soap can be produced by mixing (a) at least one member selected from the group consisting of hydroxypropylmethylcellulose, methylcellulose, hydroxypropylcellulose, hydroxyethylcellulose and hydroxyethylmethylcellulose with (b) at least one member selected from the group consisting of etherified high-amylose starch, esterified high-amylose starch and crosslinked starch to produce a film-forming material (A), mixing the film-forming material (A) with a plasticizer (B) and a soap base (C), and molding the resulting mixture into a sheet- or film-like shape. The soap contains a soap base or a soap component in a large quantity, is free from lumps, and is excellent in solubility in water, drought resistance and anti-blocking property.
Disclosed is a mineral absorption enhancer comprising indigestible dextrin or a derivative thereof as an active ingredient. A soluble film which dissolves in water without leaving undissolved lumps, has excellent meltability in the mouth, and is excellent in film properties including dryness resistance and nonblocking properties. Incorporating at least one member selected from the group consisting of -polyglutamic acid and salts thereof into a film formed from a water-soluble polymer can give a soluble film greatly improved in meltability in the mouth and water solubility and less apt to decrease in moisture resistance and dryness resistance. Incorporating a gellant and/or a plasticizer into the soluble film can give an edible film having better film properties. The soluble film is used as a covering/packaging material or support for foods, medicines, cosmetics, etc. or as an edible filmy preparation containing any of various functional ingredients.
