This invention provides an oligosaccharide-enriched composition that is derived from a bovine milk whey fraction and comprises at least 30% oligosaccharides (at least 30g per 100g of composition dry weight) having a molecular weight range of 300-1200Da, and at least 20% sialyllactose (at least 20g per 100g of composition dry weight). The oligosaccharide-enriched composition has been found to have a significant immunomodulatory effect (Fig. 1) and has been shown to significantly reduce adhesion of pathogenic bacteria to lung cells and activated pharynx cells, and thereby have a protective effect in humans from respiratory and gastrointestinal infections (Figs 3 and 4). The composition of the invention is derived from a dairy product stream that is substantially free of casein and retains lactose and oligosaccharides, for example demineralised whey powder, demineralised whey, whey permeate, or mother liquor. The dairy product stream is subjected to a micro filtration step to remove whey protein and bacteria, the permeate is then subjected to an ultrafiltration step to enrich for oligosaccharides, and the permeate from the ultrafiltration step is enriched in oligosaccharides having a molecular weight of 300-1200Da, using a chromatographic step.

A method of producing a biologically active globular protein complex comprises the step of contacting a globular protein-containing solution with an excess of a water soluble salt of a fatty acid in the presence of globular protein denaturing conditions. The globular protein is selected from the group consisting of α-lactalbumin, β-lactoglobulin and lysozyme, and the globular protein-containing solution may be mammalian milk, either in its natural form or in a pre-processed form (i.e skim milk). The water soluble salt of a fatty acid is a water soluble salt of a C16 to C20 fatty acid, for example oleic acid. A method for producing microbeads comprising an active component encapsulated within a gelled polymer matrix comprises the steps of providing a suspension of denatured whey protein and an active component, treating the suspension to generate microbeads, and immediately curing the microbeads by acidification. The microbeads are discrete droplets of gelled whey protein having an average diameter in the micron range (for example, from 80 to 500 microns) and which, suitably have a generally spherical shape. The microbeads are capable of surviving passage through the stomach, and delivering the encapsulated active agent in the instestine. Ex-vivo and in-vivo data shows that active agent encapsulated within microbeads retains its functionality upon delivery to the intestine, and that coating of the microcapsules allows targeted delivery of the active agent to the distal part of the intestine.

The invention relates to the use of PCR to detect a blown pack spoilage-causing strain of Clostridia in a meat product. The strain of Clostridia is characterised by having a target sequence in the 16S rRNA gene (SEQUENCE ID NO: 1) which is shown to be unique and capable of distinguishing the strain from other sources of blown pack spoilage and other sources of meat spoilage. The invention also provides a primers and probes for detection of the target sequence, and a PCR kit for specific detection of the strain.
