Abstract
Provided herein are exemplary methods for creating high fibrousness, high moisture extrudates by selecting a raw material for use in an extruder, selecting an additive for use in the extruder, and selecting a parameter for operating the extruder. Further methods include opening the structure and surface of extrudate, applying a needle roller to the extrudate, adding gas, steam and/or water between the extruder and a die. Additionally, the extrudate may be cooked with high water absorption, increasing water absorption from approximately 40% to approximately 80%.

Presented herein are systems and methods directed to cutting an extrudate exiting a cooling die. Embodiments of the system comprise a cooling die with an outlet end, the outlet end containing an outlet for excretion of an extrudate, and one or more plates connected to the outlet end, said plates including a cutting portion which may cut, slash, rip or shape the extrudate that flow through the cutting portion, wherein the one or more plates may be placed in series, and able to be placed in different order configurations and positions. In various embodiments an insert connection device is attached to the outlet end, wherein the one or more plates are connected to the insert connection device, allowing the one or more plates to couple with the outlet end via the insert connection device.

In some embodiments, the present technology is directed to a plant-based meat analogue produced by the process comprising: shearing a texturized product to allow the ingress of fluids; adding the texturized product to a salt solution; and heating the texturized product in the salt solution for one or more predetermined time-periods at one or more predetermined temperature ranges. Additionally, the salt solution may comprise other ingredients. In some embodiments, the texturized product is further heated in a second solution for a second set of one or more predetermined time-periods at one or more predetermined temperature ranges. In some embodiments, the process further comprises centrifugation of the cooked texturized product.

The present disclosure relates to a process and composition of preparing and processing plant-based food products such as vegan food products, wherein plant protein and water is mixed in a defined ratio in a batch and fed into an extruder using a sausage filler, creating a system wherein air from the dough cannot leave the system and back into the feeding side. The dough is subjected to a high moisture extrusion process, wherein the air within the dough is homogeneously distributed as fine air bubbles imparting a texture and lighter color similar to a meat-based food color.
