Abstract
An apparatus to cut free flank bones of beheaded, slaughtered fish, which preferably have opened abdominal cavities and are transported tail-first in transport direction T with their backbone resting on transport saddles, includes: an upper bone guide to guide the backbone from the dorsal side; a lower bone guide to guide ventral spokes of the fish, which spokes are formed in the region from the tail to the abdominal cavity; and a separating unit for detaching fillets from the flank bones surrounding the abdominal cavity. The separating unit includes a separating means having a corresponding counter unit and can be brought from a standby into a working position and vice versa. A detaching device is located in the upper bone guide region to loosen the bone connection between the flank bones and backbone of at least some of the flank bones. A corresponding filleting machine and method are provided.

Abstract
A holding apparatus for holding a gutted poultry body/part during processing has a support body supporting the body/part, a fastening body for holding the support body and fastening the holding apparatus to a circulatingly driven transport unit, and a clamping device for securing the body/part to the support body. The clamping device has a hook for penetrating into soft parts and a clamping lever. The lever has a clamping jaw for clamping parts of the body/part against the hook lower side directed towards the support body. The hook lower side is spaced apart from the support body to form a free space for receiving the parts to be clamped. The clamping lever is movable, against a spring force, from a standby position into a clamping position, and back. The clamping lever also has a centring shoulder projecting into the free space when the clamping lever is in the standby position.

Abstract
The invention concerns an apparatus for processing meat, in particular fish, comprising a processing tool, an actuating unit associated with the processing tool for moving the processing tool out of a starting position into a processing position and vice versa, and a control device which is operatively connected to the processing tool or actuating unit for control of the processing tool, which is distinguished in that the actuating unit comprises a cylinder unit having two pressure cylinders which are arranged one behind the other and connected to each other, wherein the processing tool is arranged on one of the two pressure cylinders of the cylinder unit and the two pressure cylinders can be controlled independently of each other. Furthermore, the invention concerns a corresponding method.

Abstract
An apparatus to separate a fillet attached to a backbone of a beheaded, slaughtered fish having an open abdominal cavity previously cut by an abdominal knife and a dorsal knife, by cutting through a web left round the backbone of the fish by the abdominal and dorsal knives. The apparatus includes a transport saddle to transport the previously cut fish in a direction of fish travel wherein the saddle includes an upper bone guide and a lower bone guide. The apparatus also includes a separating unit movable back and forth from a standby position into a working position. The separating unit has a separating device to detach the fillet from the backbone of the fish and a counter support associated with the separating device and arranged on the separating unit with the separating device.

Abstract
An apparatus for contactless detection of characteristics of continuously conveyed, translucent products includes first and second transmitting units each having an independent light source to generate high-intensity light radiation to illuminate the product, a light-converting element to form a planar light field from the light radiation and a focusing element to form a line of light running transversely to a direction of conveying of the products from the planar light field. A receiving unit has a detection device to pick up the light radiation transflected by the product. Shading elements are arranged respectively between the transmitting units and the receiving unit. The first transmitting unit is arranged in front of the receiving unit in the direction of conveying of the products and the second transmitting unit is arranged behind the receiving unit in the direction of conveying.
