Abstract

The present disclosure addresses the problem of providing technology which achieves good dispersibility, in a solvent or solution, of a bacteria powder that is obtained via a spray-drying step, which achieves good yield, and in which the ratio of the number of bacteria in a resultant bacteria powder is equivalent to that of conventional products. This frozen dessert contains sugar and dietary fiber, and the average diameter of ice crystals is 40 μm or less. This method for producing a frozen dessert comprises a freezing step, an extrusion molding step, and a hardening step. In the freezing step, a raw material mix containing dietary fiber is cooled to the freezing point of the raw material mix or lower in a continuous freezer to continuously prepare a partially frozen product. In the extrusion molding step, the partially frozen product is extruded from an extrusion port to obtain an unhardened molded product. In the hardening step, the unhardened molded product is hardened to obtain a hardened product. The viscosity of the raw material mix at 5°C is 100-1500 mPa·s. The temperature for extruding the partially frozen product is -6.0°C to -3.5°C.
