Detergent compounds formed from a sulfated or glycosylated polyol ester of fatty acid (PEFA) compound are disclosed. The detergent compounds exhibit reduced harshness, less foam generation, improved enzyme compatibility, and are less environmentally damaging. Non-naturally occurring PEFA producing microorganisms are provided that express heterologous gene(s) for production of PEFA with shorter average fatty acid carbon chain length or with altered hydrophilic-lipophilic balance.
