A manual knife for push cutting vegetables comprises a blade body (1) of a thin plate, an blade portion (2) formed in the shape of continuous protrusions and recesses replicating at an acute angle on the blade body (1), sharp blade edges (2a) formed on the protrusions of the blade portion (2), and slice blades (2b) formed symmetrically from the edges (2a) toward the recesses, wherein one side provided with the blade portion (2) has a curved shape swelling by 0.2-1.5 mm. Furthermore, portions (3) for preventing breakage of the blade are provided on the opposite sides of the blade portion (2), the blade body (1) is made replaceable and a grip portion (4) is formed in an arcuate shape.
Conventionally, since the edge portion has a wedge-shaped cross-section bulging to the opposite sides and a kitchen knife is used in a dull state, an onion is cut while being mashed at the time of chopping so that an irritating odor is scattered to thereby causing a pain in the eyes. In addition, in the final process of mincing, the onion is cut while being mashed because up/down operation of the kitchen knife is repeated thus bringing about a more terrible condition of the irritating odor. [MEANS FOR SOLVING PROBLEMS] The cutlery (1) comprises a handle part (2) having an open proximal end face, a closing member (4) for closing the opening of the handle part (2), a screw rod (6) cantilevered on the closing member(4), and a plurality of balancers (5) screwed to or passed over the screw rod (6), wherein the weights of the plurality of balancers (5) are differentiated and a position at which the balancer (5) is screwed to or passed over the screw rod (6) is altered, or the weights of the plurality of balancers (5) incorporated in the handle part (2) are differentiated and the incorporating position is altered, or the incorporating positions of the plurality of balancers (5) incorporated in a space (7) provided in the handle part (2) are altered.
