Abstract

The present invention relates to a method for preparing novel processed ginseng or an extract thereof. More particularly, the present invention relates to a method for preparing novel processed ginseng or an extract thereof having increased ginsenoside content. Even more particularly, the present invention relates to a method for preparing novel processed ginseng or an extract thereof, the usually minute ginsenoside content of which is increased, by preparing saponin-digesting enzymes and by hydrolysis using the saponin-digesting enzymes and an organic acid. The present invention also relates to an anticancer adjuvant composition or to a pharmaceutical composition containing the processed ginseng prepared by the method or an extract thereof.
