Abstract
The invention relates a method of infusing fruit pieces, said method comprising: (a) providing fruit pieces; (b) infusing the fruit pieces to increase the Brix value of the fruit pieces by at least 10º by contacting the fruit pieces with an infusion liquid containing at least 25 wt.% of dissolved carbohydrate selected from monosaccharides, disaccharides, sugar alcohols and combinations thereof; wherein the infusion liquid contains 1-60 g/L of undissolved micronutrient. The infused fruit pieces obtained by the present method, even when incorporated in aqueous foodstuffs, such as desserts, offer the important advantage that the micronutrient that was introduced into these fruit pieces by infusion, is largely retained therein during the shelf-life of the foodstuff. Thus, adverse effects of this micronutrient on the rest of the product matrix is minimised and, vice versa, adverse effects of components of the food matrix on the micronutrient in the fruit pieces are also minimised. The present invention also relates to infused fruit pieces that can be obtained by the aforementioned infusion method and the application of these infused fruit pieces in food products.

Abstract
The invention relates to a process of producing a package comprising non-gelatinized cookie dough pieces, said process comprising: • mixing the flour, sugar, water and fat in the extruder to produce a cookie dough; • expelling one or more strands of cookie dough from the extruder; • cutting the one or more strands of cookie dough into cookie dough pieces; • collecting the cookie dough pieces; • introducing a number of the collected cookie dough pieces into a package; and • closing the package; wherein the material temperature within the extruder is kept below 110°C and wherein, following the introduction of flour and water into the extruder, the temperature of the cookie dough within the extruder is kept below the starch gelatinization temperature. The package comprising non-gelatinized cookie dough pieces that is obtained by the present process can suitably be distributed and stored under ambient or refrigerated conditions. The invention also provides a packaged cookie dough product that can be obtained by the aforementioned process.
