Abstract
The present invention relates to a method for producing an aqueous solution containing amino acids from fish soluble matter. Characteristically, according to the invention, said fish soluble matter being at a given temperature, at least one protease having proteolytic activity at said given temperature is added thereto without modifying the pH; the pH is reduced to a value of less than 4.5 by adding at least one acid; and heating is carried out at a temperature greater than or equal to 75°C and less than 100°C for a period greater than or equal to 5 minutes and filtration is performed to obtain said solution.

Abstract
The present invention concerns a method for obtaining a peptide hydrolysate, from blood proteins from slaughter houses, and a peptide hydrolysate obtained by such a method. To this end, the method comprises obtaining the blood, adding an anticoagulant, an enzymatic hydrolysis reaction, stopping the hydrolysis reaction, bleaching the hydrolysis product and separating the hydrolysis product into a fraction containing a peptide hydrolysate and a fraction containing haem, characterised in that the whole blood obtained is introduced into a reactor inside which all the enzymatic hydrolysis and bleaching reactions are carried out, at ambient temperature, the enzymatic hydrolysis reaction being carried out on the whole blood by adding enzyme and adjusting the pH to an acid value lower than 4 for a reaction time of up to 48 hours, then stopped by increasing the pH to a basic value higher than 8.5, the bleaching of the hydrolysis product then being carried out by reducing the pH to an acid value lower than 5, the constituents of the hydrolysis product then being separated into a bleached fraction containing peptides and a fraction containing haem residues.

Abstract
The invention relates to a method for producing hydroxyapatite, comprising a step of dissolving mineral ash obtained from calcinated meat and bone meal or calcinated animal protein, implementation in hydrochloric acid, followed by a step of filtration of the acid solution obtained, then steps of precipitation by neutralisation and washing, allowing the efficient elimination of both the heavy metals and the sodium and chlorine phases initially present in the ash, and the resulting production of a very pure hydroxyapatite having a large specific surface area, after drying at a temperature not exceeding 60°C.
