Abstract

In this water-soluble hyaluronic acid gel production method, a water-soluble hyaluronic acid gel is provided which can be produced with high productivity and without the need for a step for evaporating a large amount of water from a hyaluronic acid solution. This water-soluble hyaluronic acid gel contains hyaluronic acid, water-soluble dietary fibers, an acid other than hyaluronic acid, and water, wherein: the water-soluble dietary fibers are polysaccharides that have glucose as the constituent sugar, contain bonds other than 1-4 bonds and 1-6 bonds, and do not have a cyclic structure; the water content is 1-300 parts by mass per 1 part by mass of the hyaluronic acid; and the content of the water-soluble dietary fibers is 1-300 parts by mass per 1 part by mass of the hyaluronic acid.

Provided is a water-soluble hyaluronic acid gel that is in a highly stable gel form even at a low temperature, despite being substantially free from any gel-forming component other than hyaluronic acid and containing a saccharide (excluding a liquid polyhydric alcohol being liquid at 25°C). Provided is a water-soluble hyaluronic acid gel which is suitably gelled by a hyaluronic acid even though a polyhydric alcohol is not substantially contained therein.
